As with (some) craftable ingredients and produce (to date), what would be the use for them?

(and by that, I mean: for this nuanced variety of items to exist, application of these items would have different effects in different situations)

Bribing factions?

I have been playing in this world since Jan 1st - my first MMO game.  This is a great world.  I was wondering about a game enhancement that the developers might consider in future upgrades.

There is wine and beer that we can harvest, but there are not spirits available.  How come?
How difficult would it be to add about six more items to harvest and six Spirits to make?

Collection by cotters or herbalists of the following items:
Sugar Cane: 3000-4000 units would produce one barrel of Rum.
Juniper Berry: 3000-4000 units would produce one barrel of Gin.
Corn: 3000-4000 units would produce one barrel of Whiskey.
Barley: 3000-4000 units would produce one barrel of Scotch.
Agave Plant: 3000-4000 units would produce one barrel of Tequila.
Potato: 3000-4000 units would produce one barrel of Vodka.

Then these different spirits could be served at the taverns to loosen the tongue of travelers.  
Perhaps the Spirits with higher alcohol concentration could make more quests available.

Also for the beer and wine, could there be different classifications of them?  Like making a "light beer" and a Dark Beer.  One would take longer to make but would produce more powerful results. Same as with wine - have white wine and red wines and weaker and stronger concentrations.
