Hi, in deciding where to put my city, I'd like to know where I can be sieged from. Adjacent squares? Further away? What are the rules? Ermm

You can only be sieged from the 8 squares adjoining your town.

Most squares marked 'impassable' (swamps, volcanos, etc.) cannot be sieged from.

There are a few exceptions down in broken lands with some of the 'not quite volcano' impassable large mountains (emerging mountaintop, active peak, obsidian mountain) which can be sieged from. These are the only exceptions I know about.

Towns near oceans can normally occupy and be sieged from adjacent ocean squares (these are marked by food). The outer 'brackish' ocean coast of broken lands which has no food cannot be occupied or sieged from.

It's normal to choose a square surrounded by impassable and plains.  Plains make for easy slaughter of siege camps by cavalry.  The downside of impassable is that you can't claim sovereignty on them.

How about food squares in rivers? Can a seige camp be set up there?

Yes. I believe that rivers and oceans count as plains. Can someone verify that? Lakes and lochs count as small hills.
