Sometimes I harvest out of need. I do harvest the nodes that I use to attack NPCs to clear them. I always harvest gold and food - never too much of that. Sometimes I harvest to see who else is harvesting.
Generally, I do not bump when I see green vans on a node. But I will readily bump yellow vans. And I will respond to a bump by sending a fresh van to the node. I never get irritated by getting bumped.

I mostly harvest only to free up NPC spawn points.
If I notice a new neighbor, I will harvest a bit more for a little while just to get a feel for activity and "bumping" proclivity.
If the "bumping" is purposeful, I will send a note introducing myself and asking that they be more careful when sending out caravans in the future. The tone of the response or lack thereof is what I am after more then the resources I didn't receive due to a bump.

/me totally agree with whoever propose teh 'chill out' policy...
honestly even if someone really did launch a MALICIOUS CAMPAIGN of harvesting
resources round my cities I'd actually be quite impressed

1.) New expansions in a new are to establish a hub
2.) While under siege, to boost basic res intake in an effort to buy time for relief forces
Those are two main reasons I still harvest.
I also harvest food when I crank up my tax for gold and need to keep production humming along, but most new players tend to favor he other resources over food early on.

i would replay "for the Lulz" on a serious note, harvesting is for new players... dont see how established members of illy would even NEED to send vans out harvesting ...

I always think its funny when after being bumped, I send another caravan back to the resource and bump the guy who bumped me, I get a note sying "hey, why did you bump me?" Really?

If you harvest to measure activity of other players, then you are learning who is most active with the bumping you claim to be rude.
Killing vans is an Act of War. Bumping vans is just part of harvesting. Guarding resources makes the guard fair game to attack.

Don't bother to check who bumped you. If they contact you with a "nice bumping into you", send them more caravans. Otherwise just ignore.
