I have a question on the best military unit to use for defensive purpose on the plain.

From the unit statistics (I'm human in the game), a pikemen unit has a defense vs cavalry of 14.5/g. A charioteer unit has a defense vs cavalry of 7.0/g. This makes me think that pikemen would be a good defense unit vs cavalry. However, what is confusing to me is the effect of terrain. The description states that cavalry gets big offensive and defensive boosts fighting on a plain while pikemen suffer a penalty.  My question is whether the terrain penalty to the pikemen is big enough to offset its inherit high defense vs cavalry (or whether the terrain boost to the charioteer cavalry defense will make it higher than the pikemen defense with the terrain penalty).

For defense vs other unit types, it appears that the archer has the best defense per gold upkeep value. So would a good defensive army guarding a plain square be composed of archers and whatever unit is best vs cavalry on the plain?

You're still far better off defending with pikemen, as the defense bonuses/penalties are somewhere in the order of +/- 10-30%, which is no where near what you'd need to make up for double effectiveness before terrain modifiers.
