I was noticing livestock are used in the creation of siege blocks. Is this a reference to "Monty Python and the Holy Grail"? I can't think of any other reason they'd be in the recipe.

perhaps their hides(leather) is used to wrap around the siege blocks. Or cows need to be eaten by the workers who are working on the siege blocks as normal food(grain) is not good enough for those workers.

Well, I suppose those are both good answers. But every time I look at that recipe, I see a cow flying over a castle wall and heading straight for King Arthur.

Yes indeed, it's the leather used in the construction of the ties, tethers and other sinews of the mechanism.
Although, you can glean elements of http://forum.illyriad.co.uk/deadly-peril-stalks-illyriad_topic243.html - an alternative answer elsewhere ;)

I was looking at this again, and I realized it could have been a nod to Settlers of Catan, as well as to Monty Python. After all, who amongst us hasn't squished sheep into brick or stone?

I figured it could also be the draft animals, such as mules and oxen(it says "livestock", not neccessarily cows) used to pull the equipment.
