Food. It does the same as a Farmstead on land. The amount of bonus is dependent on the food score of the square and the level of the fishery. for instance a sq with an 11 food score and a level 5 fishery will give an 11% food bonus while one with a food score of 9 and a level 4 fishery will give you a 7.2% bonus.

They may seem strange now but a while back towns with high food sov next to them were considered at a very rare resource while also necessary for good towns. The devs added coastal sov on water squares and increased the amount of food sov on the map drastically.
The good thing is there was more food sov on the map. The bad thing is if you use those squares you can't swap them to other types of sov. In the end those that thought the trade was worth it had a huge amount of additional squares to choose from.
