Per the battle calculator, 100k trueshots hitting 1M dwarven yeomen on a large mountain would result in 833,333 casualties. On plains, it would result in 952,000 casualties. So I guess plains would be worse for the spearmen.

You could probably also cause a huge train wreck with T2 archers hitting T1 spears on a large mountain. Medium attack hitting very poor defense, with a big terrain bonus, and you can field twice as many archers per hour as knights.

So... the theoretical maximum if it were all t1 cavalry or archers on plains being hit by 100k knights would be more like 400-500k...

A lot of educated guesses can be made regarding bonuses.  There were a surprising number of trueshot commanders in the overall army.  Also, the terrain the battle was fought on would go a long way toward being able to eliminate much of the guess work.  It would also have a profound affect on how much more affecting bows attacking might be vs. cavalry.  If the siege was stationed on a large forest square vs say a mountain would have a drastic affect on the efficiency of such an attack.  

Tha said, base numbers without any guess work as to commander level/bonuses

Def vs bows:  18,001,674
Def vs Cav:  19,091,187

Comparing the recruitment power of 10 cities vs. 1 city will of course provide a skewed outlook.   Yes, all the cavalry were in one city but writing off the other recruitment power of the other 9 cities especially now that several of the cities have been freed from supporting the 100K cavalry.

Good point.   I am sure the future wars/tournaments will have alot more Archer attacks to compliment the Cavalry attacks.  Especially for Elven players.

Sentinels are fast enough, almost fast as cav especially with good comm.Siege breaking units are usually sent before siege lands.It is not that hard to predict where siege lands as long as there is enough troops to be sent to cover all posible location on which siege is expected to land.It all depends on how activ is player that gets sieged and if he shares info on incoming armies to his town.If he is activ usually there is plenty of time to send needed troops to destroy siege shortly after it lands.
