Warehouse storage space (in a city) is another relevant cost, although that cost is not relevant in hubs since storage is unlimited.
I have sometimes considered attempting to calculate a "freight" cost for Illy based on price differentials for basic resources in hubs (where the buyer provides transportation) vs. city to city (where the seller provides transportation. The calculation could also be based on relatively more "distant" cities (compared to the location of food buyers) vs. "closer" cities. Would be somewhat complex math and I've been too lazy to try it, but I bet it could even get someone published, although I doubt a Nobel in economics would be merited.

The main cost of basic resources and food is the "carrying cost" of caravans. The relevant limited resource in the cases of these relatively abundant resources is caravan carrying time.

New players don't produce cows efficiently. Also, troop production consumes cows (via saddles) far faster than cows are produced. In contrast, n00bs produce massive food surpluses. Food is also consumed at a steady, low rate.
I'd try to corner swords or chain. The blacksmith is a bottleneck, and stalwarts consume swords like crazy. |

But many things are constantly produced everywhere. Like cows. Its just that food volume is higher, but the cost is also lower, right? So atleast this criticism of it doesn't make sense.

I could have held more. People have cornered the market with billions in losses at first. I just shied away at a lot of much less than that. I could have done it, but it was too boring. I'll try something more interesting next time. #BlameTiro

There are always those with large stocks of items who would be only too glad to undercut your prices. All surplus food has a cost of zero - it just accumulates - hence if it is free it should be worth nothing.
